I am always trying to eat healthier and looking for new recipes to try. I love vegetables but I am pretty picky about the way that they are prepared, so when I find a great way to cook veggies that tastes amazing, I'm obsessed. This recipe was inspired by a recipe by the Barefoot Contessa, however it is changed to my preferences. It pairs well with lots of different meals, in particular grilled chicken or steak. The measurements of the ingredients really depend on your taste, and the size of the pan. These are rough estimates.


2 large tomatoes

2 zucchini

2 squash

3 potatoes

1 onion

3 cloves garlic



Dried Oregano

Dried Basil

Parmesan (optional)


1. Preheat a couple tablespoons of olive oil in a sauce pan on medium heat

2. Thinly slice the onion in half moon shapes and add to the pan

3. Add some salt and pepper to the onions and cook them down until caramelized, about 20 minutes

4. Dice the garlic very finely and add to the pan with the caramelized onions

5. Cook for another few minutes until the garlic is fragrant and set aside

6. Slice the tomatoes, squash, zucchini, and potatoes into about 1/2 inch slices, set aside

7. In a large casserole dish, brownie pan, any old pan, layer down the caramelized onions and garlic

8. Layer in the vegetables in a pattern of your choice

9. Sprinkle the veggies with a good amount of salt pepper, oregano and basil. Then add a little bit of parmesan cheese if desired

10. Bake in an oven at about 375 degrees for about 45 minutes or until the potatoes are tender

11. Serve!
